yup! it would work with boneless chops.
ETA: Keep in mind that bone-in cook a little quicker than boneless.

no parsley is fine or try dried parsley
cilantro would be delish too
ETA: just go with what you have in the pantry! Will still be tasty with no herb. Honestly my mom already seasoned them with it lol.
